Mint Roll Recipe

Do you know the famous “After Eight” mint chocolates from Nestle? Well, we tried to make something similar for dessert… And we call it “After Nine mint roll”. It’s basically a mint roll that is delicious and reminds of the famous chocolate treats made by Nestle.

Mint Roll

Ingredients :

For the crust
  • 4 eggs
  • 120 g sugar
  • 2 small bags vanilla sugar
  • 3 tablespoons hot water
  • 100 g flour
  • 25 g cocoa
  • 1 baking powder

For the filling
  • 4 ounces of cream
  • 10 grams of gelatin powder
  • 0,5 dl peppermint liqueur
  • 200 g chocolate with mint

Preparation :

Crust
  1. First you separate the egg whites from egg yolks and then you mix them
  2. You mix the egg yolks with the 3 tablespoons of hot water in a separate container, and you add the sugar and vanilla sugar.
  3. The newly formed mixture of egg yolks is mixes with the merged with mixture of egg whites (meringue-like, snow white topping), then the cocoa and baking powder are added. A slow stir is required.
  4. The prepared mixture is baked in a pan at 200 ˚C. The warm crust is rolled in a form of a roll using a damp cloth.

Filling
  1. You pour the gelatin with 4 tablespoons of cold water and leave it to swell. Then you join it together with the peppermint liqueur and some whipped the cream by choice.
  2. Make the chocolate grated, and add it to the mixture. Next you stir hardly.

Final action
  1. The crust is coated with 2/3 filling of mint and you try to make the roll. The remaining filling is coated on the roll and some sprinkles of mint chocolate can be added here.
  2. You leave it for 10-15 minutes to breathe a little.
