Peanut toffee recipe

If you are a fan of caramel or toffee, than you are in the short list of liking this recipe. A nice mixture of peanuts and toffee make a definite hit. Here it goes…

Peanut Toffee

Ingredients for the first part:

  • 300 g sugar
  • 100 ml water
  • 125 g margarine (or butter)
  • 100 g of crushed peanuts
  • 125 g of crushed biscuits
  • 125 g of milk powder

Ingredients for the second part:

  • 200 g sugar
  • 75 ml water
  • 125 g margarine (or butter)
  • 100 grams of milk powder
  • 100 g crushed biscuits
  • 150 g of chopped peanuts

Preparing the first part:

  1. Mix the water and sugar and place them on the stove. Wait until it starts to boil and then continue for another 1-2 minutes. Then add the milk powder, crushed biscuits, peanuts and margarine. Stir quickly until the mixture becomes homogeneous.
  2. Pour the mixture into a pan that you previously oiled and sprayed a few drops of lemon. Pur the mixture nice and even.

Preparing the second part:

  1. In a pot on the stove melt the sugar by constant stirring, until you get a nice caramel (brownish) color. Beware not to overcook.
  2. Once you finish the caramelized sugar, add the water and allow it to melt over sugar. In this mixture add the milk powder, crushed biscuits, chopped peanuts and margarine (or butter).
  3. Spread this mixture evenly over the first mixture, that’s already spread on the pan.
  4. Leave the cake to cool and allow it to tighten up. When it cools just fine and both compounds are tightened, you can cut the cake into nice small cubes like caramel.

Note: If desired, you can add a little chocolate crumbs in the second part.
